Following on my our 'chatroom' discussion. Here's the Chicken Satay recipe

Chicken or Pork Satay


600 gramms of chicken or pork (cubed)
1 Onion, chopped
1 clove of garlic, crushed
1 450 g tin tomatoes, including juice
2 Heaped TBS Peanut Butter (more if you want it extra peanutty!)
2 tsp dried basil
1 tsp minced ginger (optional)
1 TBS Worcester Sauce

Fry the chicken until cooked - put aside.

Gently cook the chopped onion and garlic in a little butter or oil.
Add peanut butter, tomatoes, basil, ginger, worcester sauce and mix to a thick sauce.

Add the chicken pieces and cook for a further 5 minutes or so.

This is totally yummy!

OREO PIEā€¦..!

Crust:

2 packets (350gm total) of oreo cream cookies, crushed

75g melted butter



Mousse:

350g cream cheese

180g sweetened condensed milk

170g dark chocolate, melted

1 cup cream

1 teaspoon vanilla essence

1 packet (175g) of oreo cream cookies, halved



To make the crust, combine the crushed oreo cookies with the melted butter. Press into a 25cm loose bottomed cake tin. Put crust into fridge while you make the mousse.

To make the mousse, whisk the cream cheese until soft. Mix in the condensed milk and melted chocolate.

In a separate bowl, whisk the cream and vanilla essence until soft peaks form. Fold the whipped cream into the chocolate mixture.

Pour half of the mousse mixture over the cookie crust. Place the halved oreo cookies on top of the mixture, then pour the ramaining mixture on top.



Refrigerate for four hours or until set.




Do not have too big a slice at a go, It makes you really sick...lol, Just ask Ian
